you learn new moves as you increase in skill level in the training camps. for each level you achieve your coach teaches you new moves.
i hate to sound cliche, but the ground game is just practice, trial, and error. you gotta get a feel for when to shoot for the takedown, and when your opponent is weak enough to submit.
use sparring to get your ground game attributes up. this improves your chances of success.
